National Whiskey Sour Day rolls around every August 25, which seemed like as good an excuse as any to start poking around the bar and see what I could turn into a whiskey sour.
No grand inspiration here. No long-forgotten cocktail discovered in a dusty 1930s recipe book. I had a bottle of Mathilde Liqueur Pêche I’d recently opened, cardamom bitters that don’t get nearly enough attention, and, as usual, bourbon. That sounded like enough to get started.
The result is this Peach Cardamom Whiskey Sour, a bourbon-forward sour with ripe peach, warm cardamom spice, fresh lemon and just enough demerara syrup to pull everything together. The peach is noticeable without taking over the drink, while the cardamom and Angostura keep things firmly in whiskey-cocktail territory.
Sometimes rummaging around the home bar works out pretty damn well.
Overall Balance
Bourbon-forward and tart, with a noticeable peach sweetness rounded out by warm cardamom and baking spice. The demerara softens the lemon without turning the drink overly sweet, while Wild Turkey 101 has enough proof and character to remain the star of the show.
Flavor Expectation
Fresh peach hits first alongside bright lemon, followed by vanilla, caramel and oak from the bourbon. Cardamom emerges through the middle and finish, adding a warm aromatic spice that works surprisingly well with the peach. A dash of Angostura adds just enough bitterness and baking spice to tie everything together.
